Ideas for finishing the interior

Hello,
We want to finish the interior of our SJ21 for some weekend cruising. The boat was used entirely for racing by the previous owner. It appears as if there may have been some sort of carpet on the sides of the interior at one point. The last owner ripped it out but there is residue of the backing remaining.
We're looking for ideas on how to refinish this. Paint over it? Cover it with new "carpet" or something else? Anyone have pictures of their SJ21 Interior that has been restored?
